Maple Tapioca
2 cups Stremicks Heritage Foods™ Organic Milk
1/3 cup maple syrup
3 Tablespoons uncooked quick-cooking tapioca
1/8 tsp salt
1 large egg white
1/4 tsp vanilla extract
Combine milk, maple syrup, tapioca and salt in a saucepan and let stand for five minutes.
In a separate bowl, beat egg white until fluffy.
Bring milk mixture to a boil, then reduce the heat while stirring constantly for about 15 minutes until the tapioca is tender and clear. Add beaten egg white and vanilla extract stirring gently.
Transfer tapioca into regular serving bowl and let cool.
Chocolate Bread Pudding
1-3/4 cups of Stremicks Heritage Foods™ Organic Milk (any kind)
3 large egg whites or eggs, beaten
2/3 cup granulated sugar
1 teaspoon vanilla
6 cups cubed (1/2-inch) cinnamon swirl or egg bread
1/2 cup mini semi-sweet chocolate pieces
12 cup muffin pan
Preheat oven to 350 degrees. Combine milk, egg whites, sugar and vanilla; mix well. Stir in bread cubes and chocolate chips; mix well. Let stand at room temperature 10 minutes.
Now turn them into chocolate bread pudding muffins.
Spoon mixture into 12 paper-lined muffin cups. Bake for 30 minutes or until they look like fluffy muffins. Serve warm, at room temperature or chilled. The snacks may be cooled, placed in an air-tight container and frozen up to one month before serving.
Peter's Carrot Cake
3/4 cup all-purpose flour
1/2 cup uncooked yellow cornmeal
1 1/2 teaspoons baking powder
1/2 teaspoons ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/2 cup thawed frozen apple juice concentrate
1 large egg
1/4 cup Stremicks Heritage Foods™ Organic Milk
2 1/2 Tablespoon vegetable oil
2 Tablespoon firmly packed dark brown sugar
1 cup shredded carrots
1/2 cup raisins
1/2 cup cream cheese (light or regular)
1 Tablespoon honey
Preheat oven to 375 degrees. Spray a 9" Bundt pan with nonstick cooking spray.
Combine flour, cornmeal, baking powder, cinnamon, salt and ginger in a medium bowl.
Beat together apple juice concentrate, egg, milk, oil and brown sugar then stir in raisins and carrots. Slowly add flour mixture until everything is combined.
Pour batter evenly into bundt pan, then bake for 35-40 minutes, until toothpick inserted in the middle of cake comes out clean. Place on rack and let cool.
Frosting: Combine cream cheese and honey in food processor or blender until smooth. When cake has cooled, take out of pan and spread cream cheese mixture on top and sides. Not your ordinary Mac and Cheese
2 1/2 cups Stremicks Heritage Foods™ Organic Milk
2 cups uncooked elbow macaroni (7 ounces)
1 tablespoon butter
3 tablespoons all-purpose flour
3/4 teaspoon salt
1/2 teaspoon dry mustard
2 cups shredded reduced fat sharp cheddar cheese
1/2 cup shredded reduced fat sharp cheddar cheese (optional topping)
Preheat oven to 375 degrees. Cook macaroni according to package directions.
Meanwhile, heat milk and butter in a medium saucepan over medium heat. Gradually whisk in flour, salt and dry mustard and simmer for 1 minute, whisking occasionally.
Remove from heat; stir in 2 cups of cheese until melted. Add drained macaroni to saucepan and toss with cheese sauce. Transfer mixture to an 8- or 9-inch square baking dish.
Bake uncovered until hot and bubbly, about 20 minutes. Let stand 5 minutes before serving.
Cold Avocado Soup
3/4 cup Stremicks Heritage Foods™ Organic milk
1 large ripe avocado pitted and peeled
1/4 cup lime juice
2/3 cup water
4 green onions, chopped
1/2 cucumber, peeled and chopped
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 cup cilantro leaves
Place milk, avocado, lime juice, cucumber and green onions in blender. Blend until smooth, then add remaining ingredients all together and blend again until everything is mixed thoroughly. Chill for 30 minutes.
White-Sauce your Favorite Pasta
THIN WHITE SAUCE
1 cup Stremicks Heritage Foods™ Organic milk
1 Tablespoon butter
1 Tablespoon flour
1/2 teaspoon salt
MEDIUM WHITE SAUCE
1 cup Stremicks Heritage Foods™ Organic milk
2 Tablespoon butter
2 Tablespoon Flour
1/2 teaspoon salt
THICK WHITE SAUCE
1 cup Stremicks Heritage Foods™ Organic milk
2 Tablespoon butter
4 Tablespoon flour
1/2 teaspoon salt
Heat the milk, but be careful not to let it burn. Brown the butter slightly in a saucepan, add the flour and salt, and stir the mixture until smooth and a deep cream color. Gradually add the hot milk while stirring to prevent any kind of lumps from forming. Stir continuously while cooking for 5 minutes.
Mashed Potatoes with Garlic, Lemon, and Green Onion
3 lbs. potatoes (9 medium) peeled and cut into 1-inch pieces
4 tablespoons butter or margarine
1 1/2 teaspoons salt
1 cup Stremicks Heritage Foods™ Organic Milk (any kind), warmer than room temp.
Place potatoes in a 4-quart saucepan and fill with water until potatoes are covered, let boil. Reduce heat; cover and simmer until tender—this should take about 15 minutes. Drain, then return potatoes to saucepan.
Meanwhile, with garlic press, press 2 garlic cloves into 1-quart saucepan with butter or margarine and a dash of salt. Cook over low heat until butter has melted and garlic is golden, 2 to 3 minutes.
Mash potatoes until smooth adding garlic mixture to potatoes with milk, continuing to mash and blend. Stir in 2 tablespoons finely chopped parsley and 1 teaspoon freshly grated lemon peel.
